whipped cream from coconut milk.

step 1.  place coconut milk can in refrigerator to chill.  i left mine in overnight

step 2. scrape cream layer off the top and place in bowl

step 3.  whip, and whip, and whip!  
and then add vanilla bean.

step 4.  get out your cute pecan pie cupcakes

step 5.  place the coconut whipped cream on top.

step 6.  eat after a yummy Thanksgiving dinner!
